Four cloves in, and it still does not taste of garlic
You did what the recipe said. Four cloves, chopped, straight into the hot pan with the onions. Twenty minutes later the sauce is fine. It just does not taste of garlic, and another four would not fix it.
Most people decide they bought weak garlic, or that supermarket garlic is not what it used to be. That is not what is happening. The problem is not the clove you bought. It is the minute before it hit the pan.

Nobody explains this on the packet. Garlic is sold as if the flavour is already inside it, waiting, the same way sugar is sweet in the bag. Every recipe in the country says "two cloves, finely chopped" and stops there, as though chopping were only a way of making the pieces smaller.
There is also a whole shelf at the supermarket built on you not knowing. A jar of ready minced garlic is sold as fresh garlic with the work already done. It is not the same product, and the reason why is on the back of the jar.
What most people actually want out of garlic is simple:
- Food that tastes as garlicky as the recipe photo looked
- Not having to buy four cloves' worth of flavour and get one
- Something faster than mincing by hand, without going backwards on taste
- A tool that goes in the dishwasher instead of getting sticky in a drawer
The science bit
Garlic flavour is not stored in the clove. It is built when you break it
Here is the part almost nobody gets told. An intact clove of garlic contains almost none of the compound that makes garlic taste and smell like garlic. That compound is called allicin, and while the clove is whole, it does not exist.
What the clove actually holds is two separate things, kept in separate compartments so they never touch. One is a fairly bland sulphur compound called alliin. The other is an enzyme called alliinase. Break the cell walls and the two finally meet, and the enzyme starts turning alliin into allicin straight away. According to the Linus Pauling Institute at Oregon State University, that reaction is finished within 10 to 60 seconds of crushing.
So garlic flavour is not something you buy at the shop. It is something you manufacture, on your own board, in the minute after you break the clove open. Call it the alliinase window, because that is all it is — a short window that opens when the cells rupture.
It works like a glow stick. The chemicals are already sealed inside in two compartments, doing nothing at all. Nothing glows until you snap it. Cooking a barely bruised clove is like dropping an unsnapped glow stick into a dark room and wondering why the room is still dark.
More broken cells means more flavour, because every ruptured cell is another place the reaction can happen. That gives you a simple way to judge any garlic tool.

That last one is the part worth sitting with. A study in PLOS ONE measured how alliinase behaves at different acidity levels and found it works best at pH 7, drops off sharply below pH 5, and is already negligible at pH 4. Now read the label on a big supermarket jar of minced garlic. A typical one lists rehydrated dried garlic and an acidity regulator such as citric acid. The acid is there to keep the jar safe on a shelf, which is fair enough. What the label will not tell you is where that leaves the enzyme — and drying the garlic in the first place involves heat, which the same research says shuts alliinase down.

Crush first, cook last
Whatever you crush your garlic with, change the order you work in. Crush the garlic first, before you chop the onion, before the pan goes on. Then let it sit on the board while you do everything else and add it near the end. You want the window to open before heat closes it, not after. One 2025 study in Applied Food Research found allicin was at its most stable around ten minutes after preparation, which is roughly how long it takes to chop an onion anyway.

When not to crush
Crushing is not automatically better, it is stronger. That sharper, more pungent garlic is what you want in a dressing, a marinade, garlic bread or a tomato sauce. If you are after the sweet, mellow garlic of a slow roast, slice it or leave the cloves whole on purpose. That same 2025 study found slicing and crushing genuinely do not give you the same result, and slicing has its place.
