Creamy Guacamole For NZ Avos
Summer brings an abundance of avocados that are NZ grown. Quickly whip up a bowl for a party favourite or family snack

Creamy, Kiwi Guacamole (v, gf)
2 avocados 🌱
1 small red onion, finely chopped 🌱
1 ripe tomato, chopped (organic where possible)🌱
1 tablespoon of mayo/vegan mayo
1 lemon juiced 🌱
1 lime, juiced 🌱
salt and pepper to taste
Start by finely chopping the red onion and soaking in the juice of a lemon. This helps tone down the bitterness and bring out the sweetness. Let this sit while you prep the rest of the ingredients.
Mash the avocados with a fork or masher. Add the chopped tomato (we recommend organic for this ingredient particularly because it constantly is listed on the dirty dozen), followed by the red onion and mayo. Stir to combine.
Add lemon juice and lime juice and stir again. Season with salt and pepper to taste. Compost all food scraps (if you haven't tried composting, HERE is a good blog to get you started at home)
