Creamy Guacamole Recipe

Creamy, Kiwi Guacamole (v, gf)

Ingredients

2 avocados đŸŒ±
1 small red onion, finely chopped đŸŒ±
1 ripe tomato, chopped (organic where possible)đŸŒ±
1 tablespoon of mayo/vegan mayo  đŸŒ±
1 lemon juiced đŸŒ±
1 lime, juiced đŸŒ±
salt and pepper to taste

Directions

Start by finely chopping the red onion and soaking in the juice of a lemon. This helps tone down the bitterness and bring out the sweetness. Let this sit while you prep the rest of the ingredients.
Mash the avocados with a fork or masher. Add the chopped tomato (we recommend organic for this ingredient particularly because it constantly is listed on the dirty dozen), followed by the red onion and mayo. Stir to combine.
Add lemon juice and lime juice and stir again. Season with salt and pepper to taste. Compost all food scraps (if you haven't tried composting, HERE is a good blog to get you started at home)

This quick kiwi Guacamole recipe is a sure hit. Serve with your favourite dipping chips or cut veges for a completely waste-free snack.
