Fresh Bean and NZ Corn Salad

This salad serve as a main for lunch or a side salad for a warm dinner dish and is plant-based, GF, super low waste, packed with protein and popping with flavour.

Looking for something fresh, quick and healthy to throw together? 

A simple salad like this is a great way to utilise veg grown here in Aotearoa NZ and is completely plant-based and super nutritious too. Most of the ingredients are grow here ( look for this emoji - 🌱) or be sourced either from bulk bins or in tins, making this a totally plastic free recipe!

Ingredients for dressing:

1 teaspoon salt
â…› teaspoon ground cayenne pepper
1 lemon, juiced 🌱
5 tsp olive oil 🌱
 

Ingredients for salad:

2 cans black beans, rinsed and drained, or 2 cups black beans soaked and cooked.
2 corn cobs, cooked and sliced 🌱
1 red capsicum, chopped 🌱
2 tomatoes, chopped 🌱
1 red onion, thinly sliced 🌱
½ cup chopped fresh coriander or parsley 🌱
 

Directions

Start by making the dressing. Add the lemon juice, olive oil, salt, cayenne pepper and cilantro to a bowl and mix.
 
Prepare the beans as needed, soak overnight and boil if preparing from dry or  drain and rinse if tinned. Add the beans and leave to soak in the dressing while you prep the other ingredients.
 
Dice the red onion, tomato, capsicum and toss into the mix. Prepare your corn as needed, drain and rinse if tinned, boil and cut down along the cob is preparing whole. 
 
Add to the mix and toss well. Add coriander and parsley to finish.
